Steps
Place the beef cubes, flour, and salt and pepper in a large ziptop bag or bowl. Seal and shake to coat all cubes with flour or stir gently.
In a large skillet, heat oil until shimmering. Add the beef cubes and brown on all sides. Do not crowd meat in pan. Do this in batches if your pan is not large enough to accommodate all the meat at one time. As the meat browns, remove it to crockpot.
Stir in the beef broth and bay leaf. Cover and cook on LOW for four hours.
Add the carrots and potatoes and stir gently to combine. Cook on LOW for another two to four hours or until meat and vegetables are tender.
Adjust the seasonings with salt and pepper to taste.

Tabotha Riley-Brown on 2024-03-18 (5 stars): I made for a St. Patrick's Party for the first Time, it was a hit of the Party everyone Loved the stew and a couple of my friends wants the recipe.
YK on 2022-03-21 (5 stars): I made this for St. Patrick's Day this year, using a bit of Better Than Bouillon Beef dissolved in hot water for the beef broth and unpeeled Yukon Gold potatoes (4C) with the unpeeled carrots (2C). It was absolutely homey and delicious.
Jamie Cotton on 2022-03-18 (5 stars): I made this for St. Patrick's Day and it was absolutely delicious. I used chuck roast and cut round slices of carrots instead of baby carrots. I added a bit of garlic and Guinness extra stout beer to the stew along with the broth. I seared the beef as instructed, but cooked it in the instant pot for 35 minutes with the uncooked veggies with the onions on the bottom. While it was cooking I made buttery baconed cabbage as a side. It was the perfect complime to the dish and everything was delicious. I will definitely make this again. This is a lot better then salty corned beef.
Adrienne on 2021-12-21 (4 stars): Good basic stew. I will make again and experiment a bit.
Shaun on 2020-10-21 (5 stars): I loved the recipe, the flavor was amazing and it looks absolutely delicious, I do want to note though, I did a stove top cooking because I didnt have a crock pot, and noticed that the potatoes were still hard after the thirty minutes, is there anyway that we can put the vegetables in earlier than 30 minutes on stove top??
