  1. I'm outlining two methods here. Peeling the zest off in strips using a vegetable peeler requires more oil and makes a slightly weaker infusion but is what I recommend starting with.
  2. Wash and clean the lemons.
  3. Using A Vegetable Peeler

    - Pare the zest with a peeler and massage with the salt.

  4. Using A Microplane Zester

    - Zest the lemons with a microplane grater and mix with the salt in a bowl.

  5. Infusing

    - Cover the zest with oil and infuse for 3-4 days.

    - Strain the oil after a week.

    - The oil will keep at room temperature or in the fridge.

    - Olive oil solidifies when refrigerated but does not affect the flavor.

    - Use the oil on foods before serving.
