In a large bowl, combine almond flour, salt and baking soda
Stir in dried fruit and nuts
In a medium bowl, combine eggs, oil, coconut sugar, vanilla and citrus zest
Stir wet ingredients into dry
Scoop batter into 2 greased mini loaf pans
Bake fruitcakes at 350°F for 20-30 minutes
Cool and serve

I typically use any variety of dried fruit I have available, raisins, dates, apricots, cranberries, etc. and soak them over night or longer in brandy before making the cakes. The alcohol will cook off in the oven leaving the delicious flavor of brandy.
So delicious, love, love, love this recipe. I don't usually like many almond flour recipes as they can be heavy and a bit greasy, but this one is spot on!
