Steps
Mix 1/2 tsp fine salt or tsp kosher salt, 1 tsp spices and seasoning, and 1 to 2 tsp water together in a bowl.
Add 1 cup raw cashews and toss to coat. If the spices are clumping together, add more water 1 tsp at a time.
Spread the cashews on a baking pan, taking care not to crowd the pan (see Note 2).
Roast in the oven at 350 °F for 10–12 minutes, shaking halfway to turn (see Note 3).

Gina on 2025-09-27 (5 stars): Excellent! I bought a big bag of raw cashews for the first time, as I’m trying to get away from seed oils. This recipe was so easy and delicious! Thank you!!
jillene on 2025-09-15 (5 stars): I made these nuts four times already. Such a great, simple recipe! Just now I used pecans and they're beyond YUM
Eliza on 2024-09-02 (5 stars): I made a large batch of plain roasted & salted cashews using your oil-free recipe. They took 15 minutes in my oven. I turned them every 5 minutes. They turned out perfect. However, I live in Arizona and it's 110 degrees outside and it heated up the house to have the oven on. I saw my air fryer sitting on the counter and wondered if that would work. Not wanting to waste cashews, I "watered" & salted 1 cup of raw cashews. I set my air fryer for bake at 350 degrees, waited for it to preheat, then tossed the cashews right onto the tray. I set the timer for 5 minutes and stayed close by. At 2&1/2 minutes I could start to smell the cashews. I removed the tray, shook the the cashews, returned the tray, and cooked the remaining 2&1/2 minutes. They turned out wonderful, only took 5 minutes, and didn't heat up my kitchen!!

Jillene on 2023-03-14 (5 stars): WOW yummmm I baked them longer, 15 minutes, in celsius oven. (175°)
Made big glass dish plain and small dish with smokey paprika and chili powder.
They're a bit squishy while hot, but getting crispier now.
Gret recipe! THX
