1 head of green cabbage ((washed, outer loose leaves removed))
2 tablespoons unsalted butter
2 tablespoons olive oil
1½-2 cups chicken broth
½ teaspoon salt (plain, seasoned or smoked)
course black pepper (to taste)

Steps
Slice cabbage into quarters, removing & discarding the hard stems at the center.
Slice each quarter into 1-inch wide strips. Set aside.
In a large pot, melt the butter and add olive oil.
Add remaining ingredients to the pot, including the cabbage. (broth should taste flavorful like a soup)
Stir and bring to a boil, immediately reduce heat to a simmer, and cover.
Simmer 12-15 minutes or until cabbage is tender to your liking. (Do not overcook or cabbage will be slimy)
Taste and adjust seasoning if needed.

Marie on 2024-10-03 (5 stars): I am a baby boomer and this was my Mother’s way of cooking cabbage but she also par boiled the small golden parties and added to the cabbage and finished cooking them with the cabbage and this is how I cook it til this day at age 62 and served with a small amount of rice (optional) and cornbread. My sister always wanted the core cooked because it was her favorite part. There’s nothing like old fashioned southern cooking.
