10 tablespoons salted butter, divided (( I used KerryGold))
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1 teaspoon sea salt
½ cup sour cream, cold
¾ cup 7-Up soda, cold ((may not need all of it))

Steps
Preheat your oven to 450°F and move the oven rack to the top position.
Pour 4 tablespoons of melted butter into the bottom of a dark 9-inch round pan or oven-safe skillet. Set aside.
In a large bowl, whisk together flour, baking powder, sugar, and salt.
Grate 4 tablespoons of cold butter directly into the flour mixture. Using a pastry cutter, cut the butter into the flour until the mixture resembles coarse crumbs.
With a rubber spatula, stir in the sour cream and then add the 7-Up. (Add the 7-up a little at a time, since you may not need all of it.) Gently stir until a dough forms.
Turn the dough onto a floured surface and knead gently a few times. The dough will be sticky. If it's dry add more 7-up. Sprinkle just enough flour over the dough to make it manageable. You want the dough to be slightly sticky.
Pat the dough out, then fold it into thirds ( like folding a letter). Turn the dough and repeat this step to create flaky layers.
Finally, pat dough out into a 1-inch thick rectangle.
Dip a 2½-inch round biscuit cutter or cookie cutter into flour and then press it straight down into the dough without twisting it.
Cut out 8 biscuits, rerolling the scraps as needed.
Place the cut biscuits into the buttered pan with sides touching and one in the middle.
Using some of the melted butter in the pan, brush the tops and sides of the biscuits with butter.
Bake on the top rack for 12-14 minutes or until the center is cooked through. I like to broil on low for the last couple of minutes to encrouge browning. (These biscuits do not brown much though)Just be sure to keep and eye on it the entire time it's broiling to prevent burning the biscuits)
Remove from the oven, and immediately brush the tops and sides of the hot biscuits generously with the remaining 2 tablespoons of butter.
