  1. Preheat oven to 350℉ and grease an 8-inch square baking dish.
  2. Place 1 cup dates (chopped) in a medium bowl. Sprinkle 1 teaspoon baking soda over the top of them.
  3. Pour 1 cup boiling water over the dates. Set aside while you prep the remainder of the batter.
  4. In a separate large bowl, cream together the 2 Tablespoons salted butter and 1 cup granulated sugar.
  5. Stir in the 1 large egg and ½ teaspoon vanilla extract.
  6. Add the 1 cup all-purpose flour and stir until combined into a thick dough.
  7. Pour the water and dates into bowl with the dough. Stir until it becomes a loose batter.
  8. Pour into prepared pan and bake for about 30 minutes, or until a toothpick inserted into the center has just a few moist crumbs.
  9. Serve warm with whipped cream if desired.
