1/2 cup (113g) unsalted butter, room temperature
2/3 cup (142g) packed light brown sugar
2 tablespoons ground cinnamon
Pinch of salt
4 ounces cream cheese, at room temperature
½ cup (113g) unsalted butter, at room temperature
3 cups (336g) powdered sugar
2 tablespoons (30g) milk
1 teaspoon vanilla extract

In a stand mixer fitted with the whisk attachment, mix 2 cups of the flour with the granulated sugar, yeast, and salt on low speed until combined.
In a microwave-safe bowl, microwave the milk and butter until the mixture is warm to the touch and the butter is mostly melted, about 45 seconds (you don’t want the mixture to be steaming or too hot, as this can kill the yeast).
Pour the milk mixture into the flour mixture. Add in the egg. Beat everything together on low speed until combined. Gradually increase the speed to high and beat for 2 minutes. The dough will look more like batter, but this is correct! This step kicks off the gluten development.
After 2 minutes, change to the dough hook attachment. Add in an additional 1 ½ cups of flour and knead on low speed until combined. Use a silicone spatula to scrape down the sides of the bowl. Add the remaining 1 cup of flour (totaling 4 ½ cups) and knead on low speed, stopping the mixer occasionally to re-disperse dough, until the dough starts to pull away from the sides of the bowl and forms a ball around the dough hook.
Increase to medium-low speed and knead until the dough becomes smooth and supple, about 10 minutes. If the dough gets wrapped around the hook too much, turn off the mixer, pull the dough off, flip it over, and turn on the mixer again. The dough is ready when you can stretch a quarter-sized piece of dough between your fingers and see light through it (without it breaking). This means the gluten has developed enough! If your dough breaks, knead for a few minutes more and try again.
Transfer the dough to a large lightly-oiled bowl and cover the bowl with a dish towel or plastic wrap. Let rise in a warm place until the dough has doubled in size, about 1 hour.
In a medium bowl, add the softened butter, brown sugar, cinnamon and salt. Use a silicone spatula to mix together until it makes a paste. Set aside.
Turn the dough onto a well-floured surface. Use a rolling pin to roll it into a 12-inch long by 18-inch-wide rectangle, with the wider side closest to you. Using a silicone spatula, spread the filling all the way to the edges of the dough.
From the 18-inch wide side closest to you, roll the dough into a tight log. Press the dough along the outside seam to seal everything together. Use a very sharp knife (or floss…yes seriously!) to cut the dough into 12 even rolls. Place the rolls in a 9 x 13-inch inch pan lined with parchment paper on all sides. Cover the pan with a dish towel or plastic wrap and allow to rise in a warm place until doubled in size, about 1 hour.
Preheat the oven to 350°F. Remove the towel or plastic wrap and bake the rolls until they are golden brown all over, about 30 minutes. Place the pan on a wire cooling rack to cool slightly, about 15 minutes.
In a stand mixer fitted with the whisk attachment, combine the cream cheese, butter, powdered sugar, 2 tablespoons of the milk, vanilla, and a pinch of salt. Beat on low speed until combined, then gradually increase the speed to medium-high and beat until light and fluffy, about 1 minute. If the frosting is too thick, add another tablespoon of milk and beat to combine. Spread the icing evenly over the slightly warm rolls. Enjoy warm!

I did this recipe completely by hand and I didn’t think it was too bad! I followed the recipe to a tee. Only thing I struggled with was finding a warm spot for rising. First rise did nothing after an hour so I googled some tips and found that you can preheat oven to its lowest temp for a few minutes then turn it off. They rose perfectly!! They taste even better the next day somehow.

I started learning how to make yeast bread everything by probably the hardest way possible that's from milling my own grain with a nutrimill stone grinder. shanthi on 2025-01-20 (5 stars): this is the BEST recipe for cinnamon rolls! kneading the dough till it passed the windowpane test and not over baking them made all the difference. i added cardamom powder and vanilla bean paste to the filling for some extra flavor and it was so good. i put the rolls in the fridge overnight after cutting them (before baking) and they turned out just as fresh too. my whole family enjoyed these for a snow day breakfast!

Used 180 Celsius oven temp and as I doubled the recipe-ish used a 250g tub of light cream cheese and equal butter and half the powdered sugar. It WAS better than Cinnabon. Great recipe. Tried to knead dough by hand but was too crazy so scraped it in food processor with dough blade as don’t have a kitchen aid and that was only way I got it done. Took a long time but was worth it. Thanks!

Cam on 2025-02-15 (5 stars): Home baker for over 50 years...Suggest that your yeast should go into warm milk/butter and sugar mixture. Make sure sugar is well dissolved. Add yeast last. Stir and let sit for about 10 minutes until the yeast bubbles. Salt and yeast should not sit together except to mix together. Salt kills the yeast.

I’ll be saving this one as “THE cinnamon roll recipe”. I drizzled the tops with a bit of heavy whipping cream before baking and of course, more cream cheese frosting. Otherwise I made them exactly as the recipe suggested. Perfection!

Every single time the rolls come out flawless - both when made the same day or made the night before and baked the following morning. What I also LOVE about this recipe, is that if you don't have a stand mixer, don't worry!! A hand held one with dough hooks works just the same, and the only difference is I knead the dough by hand.

This is the second recipe from BRoma bakery that I have made the first one was the brown butter, chocolate chip cookies, and those are bomb and are a staple in my home. The only difference that I did was use a little bread flour because I ran out of regular flour but it was only like half a cup maybe and they still were light fluffy airy delicious

I topped them with a cinnamon roll frosting from King Arthur only because we aren’t big cream cheese frosting people. My only complaint about these rolls is the lack of a gooey cinnamon sugar on the inside. I will increase it by almost 50% next time. I don’t like a subtle cinnamon flavor, I prefer it a bit more pronounced. I prepped these at 6 PM, then before doing the second rise, I popped in the fridge. The next morning around 10 AM, I took them out to rise a 2nd time (about an hour). Then baked them. I also froze 6 of them after baking (without frosting). I reheated those cinnamon rolls on Thanksgiving yesterday, and they were incredible. I normally don’t like reheated bready things. Anyway, that is why this recipe gets 5 stars instead of 4. I think with more cinnamon sugar, they would be an easy 5 out of 5 stars. Thanks for posting this recipe!

We came across this recipe as it said 1hr for the recipe, took us around 3 but I do have hands-in-everything toddler, but boy..these were worth it!!
We just swapped out light brown sugar for demerara and blitzed it a bit so the granules were smaller (made this swap as light brown sugar seems to have glycerol in it!)
I am ashamed but proud of my eating 2 as soon as they weren't lava hot and i'm shamefully admitted I could devour another 2, but I have size 8 jeans to fit into in the morning!
My daughter absolutely devoured hers and said these beat cinnabon without a doubt!

I only used 48g of sugar in the dough, but I'm on the fence about upping it to the original 70g (depends on how sweet you want your bread/roll). I added (an unmeasured) chunk of almond paste to the cinnamon filling. And, I used 7TB (instead of 8) soft butter plus 4 oz mascarpone (instead of cream cheese) for the filling (because that's what I had). All very small changes. 5 star.
